Spanish Style Prawns with Clarified Butter
200g Western Star Butter
4 garlic cloves, sliced
1 fresh red chilli, thinly sliced
400g prawns
50ml dry sherry
salt and pepper, to taste
½ bunch parsley
Western Star Salted Butter
Clarify Western Star Butter.
In a pan heat clarified butter and garlic slices.
When garlic starts to colour add the chilli, prawns and sherry and cook for 6 minutes.
Season with salt and pepper and sprinkle with chopped parsley.
Tip :
Serve with toasted ciabatta or lemon wedges
