Christmas Turkey
Ingredients
1 Buffet style turkey
Stuffing
1 pasta dura, crusts removed
200g shallots
100g bacon
½ bunch parsley
½ bunch sage
5 cloves garlic
150g Western Star Butter
salt & pepper, to taste
100ml oil
Western Star Salted Butter
Method
Stuffing
Cut bread into cubes. Chop shallots, bacon, parsley, sage and garlic.
In a pan on low heat mix the above ingredients with Western Star Butter and season with salt and pepper.
Turkey
Stuff turkey and trusse. Season skin with oil and salt and pepper in a tray with breast down.
Place in pre heated oven at 170 °C for approximately 1 hour plus 45 minutes for every kilogram.
Remove turkey from oven and allow to rest for 10 to 15 minutes.
Tip :
Serve turkey with buttered asparagus and cranberry sauce.
