Lobster Thermidor
Ingredients
2 live lobsters
5g paprika
100g Western Star Butter
100g Mainland Swiss Cheese
Sauce:
250g bechamel
20g mustard
Western Star Salted ButterMainland Swiss
Method
Steam or poach lobster then allow to cool. Cut in half and remove meat and guts.
Make béchamel, add mustard, paprika and half of Mainland Swiss Cheese. Mix through diced meat. Heat and place back in shell. Top with remaining Mainland Swiss Cheese and finish in oven (210°C until lightly browned).
Variation :
Mainland Egmont can be used instead of Mainland Swiss Cheese.
