Breakfast Bruschetta
Ingredients
1 field mushroom
1 rasher bacon, trimmed
50g Perfect Italiano Shredded Mozzarella
1 thick slice sourdough bread, toasted
Basil pesto, for drizzling
Freshly ground black pepper, to taste

Method
Grill whole mushroom and bacon, cover and keep warm. Sprinkle Perfect Italiano Shredded Mozzarella over toasted bread and grill until golden and bubbling.
To serve, top toast with cooked mushroom and bacon, then drizzle with pesto. Season with black pepper.
