Two Cheese Quiche
200g shortcrust pastry
30g baby spinach
1 garlic clove, crushed
150g leeks, sliced
50g Western Star Unsalted Butter Pat
150g Anchor Cooking Cream Pack
3 eggs
Salt and pepper to taste
180g Cream Cheese
40g Perfect Italianio Parmesan Grated Cheese

Preheat oven to 160°C fan forced oven.
Line 28cm mould with pastry, prick and blind bake. Remove from oven and rest.
Saute spinach, garlic and leek with Western Star Unsalted Butter.
Blend Anchor Cooking Cream, eggs, salt and pepper and cream cheese.
Reduce fan speed by 1/3 if possible.
Spread half of the sautéed vegetables on base of pastry. Add egg mix and finish with the rest of the vegetables. Sprinkle Perfect Italiano Grated Parmesan Cheese over mix and place in oven.
Cook for 25 minutes or until quiche has set and is golden on top.
Allow to cool and serve with salad.

Serve with cream cheese stack.
